Article: Why do many proteins not taste good?

Why do many proteins not taste good?

Many protein powders do not taste good for two main reasons. The first is that many brands use cheap fillers, artificial sweeteners and additives that end up leaving a chemical aftertaste, more like a medicine than a product designed to take care of your daily life.

The second is a matter of expectation: many people expect a protein shake to taste like Nesquik or a commercial drink, when in fact these supplements are primarily formulated to deliver nutrients, not to mimic ultra-processed flavours and are often high in sugar.

It's not the protein, it's how you mix it

It's common to hear that ‘all protein tastes bad’, but it really depends a lot on how you prepare it. A shake mixed with just water, no matter how good the protein, will often be flat or watery. The same would be true if you mix water with cocoa powder or three strawberries in a blender: it would not be a very pleasant experience.

On the other hand, if you use a vegetable drink, such as oat or almond milk, the result is significantly improved. The texture is creamier and the flavour is intensified, without the need for added sugars or loss of nutritional quality. This is one of the keys to transforming a bland experience into a great-tasting protein you'll actually want to drink every day.

The source of protein influences the taste (a lot)

The protein base you consume directly affects the taste and texture of the shake. For example:

  • Whey: Accepts added flavors well, although some versions may have a milky or rancid aftertaste. It's important to note that many people are lactose intolerant , which can cause digestive discomfort if the product isn't isolated or is poorly formulated .

  • Pea protein: It has a more earthy and vegetal profile. If not combined with other sources or the flavor isn't properly processed, it can be bitter or "legume-like."

  • Rice protein: It is softer, although with a somewhat sandy texture, but its flavor is neutral and easy to cover with natural ingredients.

  • Soy: It has a stronger flavor, sometimes described as "vegetable porridge." Furthermore, its allergen profile means many people prefer to avoid it.

In short, not all plant-based proteins taste the same. The quality of the raw material and the treatment it receives make a big difference if you're looking for a protein that tastes good .

Some brands sacrifice protein for taste

Another common problem is that many brands choose to lower the percentage of protein per serving in order to add more flavourings, acidulants or sweeteners. If you check the labels, you'll see that some flavoured versions don't even reach 70% pure protein. What you gain in taste, you lose in effectiveness.

In the end, all you end up with with these chemical mixtures is that you need to take more of the product to meet your protein needs, which is more expensive, less efficient and, in many cases, quite counterproductive. You take more powder, more sugars, more fat, and less real protein.
